Where I Am At

This kinda took a nose dive after it started. That happens. I typically finish what I start, but I know if I put huge intentions and too much restrictions on something, then it likely might go by the wayside. That’s what happened here. Also, I’m someone who does better if I stumble upon a site and naturally feel like creating something there. Those things I stick with. Since I went out and found this site – blog.com – which is a perfectly fine site, specifically to create EAT!, it was doomed to fail.

But you can find EAT! other places.

Originally EAT! was created on Pinterest and it’s still there and very active.

Recently I’ve been spending a lot of my time on Tumblr. One new favorite passion of mine is looking at Fitspiration/Fitspo and Thinspiration/Thinspo Tumblrs. They are so inspiring, you wouldn’t believe it.

After an evening perusing an F/T blog, I feel so renewed and refreshed the next day. My new addition to the Fitspo/Thinspo or Fitblr/Thinblr community is my Tumblr blog called Fitspo / Thinspo. I hope you’ll drop by.

EAT! magazine also has a home on Tumblr. I’m hoping you’ll continue with it there.

Everything must have closure and this has come to an end. Since I doubt this version of EAT! is going to go anywhere, it’s time to say good-bye.

Sisters Cafe

I was in the wonderful, captivating town of Eureka Springs, Arkansas on Saturday. If you’re a traveler, this is a must-see town. It has more shops and galleries than any town I’ve ever seen and I’ve been fortunate to have visited all of the lower 48 contiguous states. It is the funnest walking town with the curves and hills. Don’t get me wrong, most of the hills in the heart of the downtown are slight enough that you won’t get tuckered out. Truly, it’s like the ideal slope. Now there are some side streets with residences that do have hills that will challenge you, but even those are fun! The architecture looks like it’s out of a movie set. It’s a mix of old Western frontier, which I find funny considering the location being in the northern South, combined with New Orleans-style Victorians with porches. It is a place to visit and see for yourself. You won’t be disappointed.

The main highway that comes into Eureka Springs is 62 and along it are many more businesses, restaurants and shops. What’s nice about the ones located out on the highway is that parking is much easier. When I got frustrated on Saturday not finding parking in the heart of the town, I headed the few blocks out to Highway 62 to look for food. This is when I discovered Sisters.

I liked it immediately. It’s an old house, which catches your eye, plus I saw the sign with the cafe’s name and that’s a heart-warming name. To boot, there was an OPEN sign, which is always a good, welcoming indication that this is the place to go on a day in the off-season when everyone rolls up their carpets early. I pulled up on Alamo, the little side street that gives Sisters Cafe its address, although it’s completely visible from Highway 62 across from Century 21, so you can’t miss it.

My friend and I walked in. We were immediately greeted by Joette, one of the twins, who owns the cozy little restaurant. She presented us with a hand-written chalkboard or marker board that showed the day’s offerings. She explained that the menu changes daily due to what Jeannette wants to make for the day. There were three entrees, a choice of two sides from several and two desserts. The prices were reasonable and the offerings looked delectable.

She asked if we wanted to sit. We did. She showed us into the dining room, a little room through the doorway. Remember this is an old turn of the century house that has been converted, so the rooms were once rooms that a famous Eureka Springs historian lived in for many, many years.

I had a hard time choosing between the Chicken & Cornbread Dressing, Meatloaf or Smothered Pork Chops, but I decided on the Chicken. I chose as my first side the Black-Eyed Peas and Butter Beans. I made my second side the Mashed Potatoes & Chives, which came topped with Cheddar Cheese and Sour Cream. I had Sweet Tea to drink. My friend wasn’t hungry, so he ordered a coffee and got a Strawberry Shortcake to go. The food was wonderful and the atmosphere so cheery and comfortable. It felt modern, clean, simple and elegant while making you feel right at home.

Joette and my friend got talking about a timer she was trying to get working so the lights would come on and off on her sign on the highway after dark. He spent some time helping her get that set up. She explained they had come from Memphis where they were born and raised and fell in love with Eureka Springs, like so many do. They decided, What the Heck! and bought the house and decided to open their cafe. What a wonderful story!

Since I’m still in the process of losing a few more pounds at the end of my losing journey, I tend not to stray off my eating plan. But I’ve found the couple of times I have, I still lose at the end of the week, and I did again. I think maybe it helps the body to have a different experience and eat some good, home-cooked food.

As far as my eating plan that has helped me lose nearly 76 pounds, I’ll talk about that in a future post.

Navigation and Future at EAT!

Perhaps an introduction is in order.  On the left side of the page, you’ll see pretty self-explanatory sections.  I’d venture the only section that might require some detail is Delicious. The other section that is very useful is EAT! Elsewhere because I sure do want you to visit the EAT! Board on Pinterest to get on with some cooking! You can subscribe to EAT! by signing up for email updates of new posts as they are published. You can reach EAT! via phone or email. And don’t take our word for anything. Always be in touch with your choice of health practitioner.

Luckily, Delicious is a fitting name for that section as those are my Delicious bookmarks.  Just click on each title to reach the original article or slideshow. Each bookmark is carefully hand-selected to provide worthwhile reading that is focused specifically on health and nutrition in relation to food.  The list is constantly updated and don’t fear on being overwhelmed by reading because many of the links are wonderful slideshows. I like the look and feel of an online magazine.  It offers the Internet reader a singular experience.  ISSUU will be added to the site to create the magazine aspect.  It is expected to happen within 2012.  Currently, the posts will be accruing to become the articles for each issue

Kirstie Alley’s Organic Liaison

I’m pretty excited.  I discovered Kirstie Alley started a new weight loss program called Organic Liaison.  She looks stunning after losing 100 pounds.  I know she’s an active Twitterer, but I never expected to get retweeted by her! Her company, Organic Liaison, retweeted me as well.

I love her new program!  I spent a couple of hours last night poking around.  It’s not food. It’s organic products that help you lose weight, give you energy, help you relax and sleep all naturally, plus clean you out.  I love her glass bottle to drink from.  It can be incorporated into a weight loss program or you can follow the organic meal plan that is provided by Organic Liaison. I am very interested in following the organic meal plan because understanding organic foods is my next journey.

You must watch the Getting Started video where Kirstie explains each product.  Once you watch it, it all makes sense.  I’m going to do it within a few months.  I think it’d be great for maintenance, losing any last few nagging pounds, keeping them off, getting healthier and learning a bunch more about nutrition.  I’ll return later to talk about each individual product and then after I get my order, I’ll provide an in-depth review for each one.

Both Kirstie and Organic Liaison retweeting me, I think, is pretty neat!

Ashley’s Kentucky Cornbread

Welcome to EAT!

I’d like to start off with some healthy down-home food.

Ashley’s Kentucky Cornbread

2 cups cornmeal
3/4 cup skim milk
3 Tbsp veg oil
1/4 cup egg beater

Add water as needed to thin batter. Preheat oven to 375. Add oil to a 9×9 baking pan. Place on oven until it just sizzles. Mix dry ingredients. Add egg beater and milk. Mix. Add about 3/4 c. of hot oil to batter and mix. Add just enough water if needed to thin batter. Pour in pan and place in oven for about 20-25 min. until brown on top. Makes 12 servings. 121 calories, 3.5 grams fat, fiber is roughly 1.5 grams.
